SOL Mexican Cocina opens in the Forum Shops at Caesars Palace in Las Vegas.

SOL Mexican Cocina is a Baja, California-inspired restaurant chain with locations in Newport Beach, Scottsdale, Denver, Los Angeles, and Irvine. Each venue creates traditional, authentic Mexican food from scratch using the same tools and techniques used by Mexican chefs for centuries. The menu features organic, seasonal dishes, sourced locally whenever possible, and ensures each dish is made fresh every day, including over 24 fresh house made salsas.
