The Sirena,  A captivating cocktail featuring strawberry lemongrass vodka, passionfruit cordial, wild thyme honey, pineapple, Amalfi citrus, and clarified Greek yogurt. At the helm we found Chef Martin Heierling. He has over 30 years of culinary experience, including leadership roles in iconic luxury hotels and restaurants. Throughout his career he conceptualized and launched multiple successful dining ventures, including Silk Road at Vdara and recognized globally with awards like the StarChefs Rising Star Chef nomination and the HAT Award.

The menu will change seasonally to ensure freshness and to incorporate the best ingredients available. Heierling’s creative approach often includes innovative techniques like dry-aging seafood which enhances flavor and texture as well. Featured items that caught our attention right away were Regiis Ova Caviar & Jamón Ibérico Croquetas A luxurious starter, featuring premium caviar paired with indulgent croquettes wrapped in gold leaf and garnished with delicate chive blossoms, exemplifying opulence and craftsmanship.

Paella alla Pisces: is the centerpiece of the menu, this signature paella combines the richness of spiny lobster tail, succulent shrimp, tender calamari, mussels, and clams, all cooked with saffron and nora chili rouille over fragrant bomba rice. It captures the essence of Mediterranean coastal cuisine, offering a communal, celebratory experience.

The Mediterranean Bass Ceviche Fresh, citrusy, and invigorating, this dish showcases the bounty of the sea with a Mediterranean twist. And Sesame Crusted King Salmon A beautifully seared piece of salmon with a crispy sesame crust, complemented by vibrant sauces and seasonal vegetables.
