NOVE Italiano at Palms Casino Resort has always been a long time favorite with delectable cuisine and one of the best views of the strip. Veteran General Manager Aaron Whitten has now taken the guest experience to a whole new level and has introduced the NOVE Italiano Guest Series. This fun and tasty series features renowned culinary experts showcasing their exquisite cuisines, cocktails and desserts during three events.


We attended the dinner in early June and enjoyed a lovely dining experience with NOVE Italiano’s Chef de Cucina Kieran Toivonen and Mulitple James Beard winning chef, Luciano Pellegrini. Coming up, Award-winning master mixologist, Francesco Lafranconi, joins the guest series in July to create hand-crafted cocktails to complement a meal by Chef Toivonen, and in September guests are invited to sip their way through a craft beer pairing alongside Chef Toivonen’s skillfully crafted cuisine.

We sat down with General Manager Aaron Whitten who stated “This is just the beginning, for now we have things scheduled into September but plan to continue the series throughout the year”.  After enjoying the first one, we only look forward to the months to come.

Each guest series dining experience commences with passed appetizers on the intimate mezzanine level and then progresses to a sit down dinner in the main dining room offering breathtaking views of the famed Las Vegas Strip below. Following each dinner, guests can dance off their meal with complimentary admission to Ghostbar as well.


The June Dining Experience with Chef Kieran Toivonen and Chef Luciano Pellegrini was a gastronomic delight. Upon arrival, we enjoyed appetizers watching Chef de Cuisine Kieran Toivonen’s and Chef Luciano Pellegrini’s culinary skills at work at action stations located on the mezzanine level. Following appetizers, we enjoyed a four-course meal consisting of dishes from both Toivonen and Pellegrini, served in alternating fashion around the table.

Chef Toivonen treated us to Grilled Quail Agrodolce with fregola and escarole, Lamb Ossobucco with cauliflower puree served with asparagrus and maiitake salad. Legendary Chef Luciano Pellegrini had our palates memorized with grilled sardines over stewed cannellini beans and roasted mini beets, as well as Veal Saltimbocca on corn polenta and pea shoots.


For the FINI we mingled with other guests and the chefs as we enjoyed a dessert course featuring gelato produced by Pellegrini’s own brand, DolceVita.

Next up to the plate will be an evening Master Mixologist Francesco Lafranconi on July 10, 2014 at 7 p.m. $105 including tax and gratuity. In September enjoy A Tour of Craft Beers on September 14, 2014 at 7 p.m. $165 including tax and gratuity. These events have Limited seating is available and advance reservations are required.
