Cuisineist Travels in Las Vegas What a night! 🎃🥂 Our Halloween evening started with a pre-show stop at the renowned Ada's in the Las Vegas Arts District — a Michelin-mentioned treasure and home of the World's Most Original Wine List (The World of Fine Wine, 2024 & 2025).

From the moment we sat down, Chef James Trees and the Wine Goddess herself, Kat Thomas, provided exceptional service and hospitality. It began with a welcome champagne — and went on from there! The menu reads like a love letter: miche bread with onion jam and butter, cured wagyu beef with aged beef fat, whipped brie with blackberry and honey. We dove into the burrata with persimmon and salsa macha, and the braised short rib over butternut squash polenta and peppercorn was pure comfort on a plate.

And the wine! Kat's list is an adventure all its own, and we finished sweet with a Donnafugata Ben Ryé 2023, Passito di Pantelleria — liquid sunshine from Sicily. 🍷

Then it was off into the Halloween night. Ada's, you set the bar — we'll be back!

Three hours on the trail to Fossil Ridge — and worth every step. 🐚

Long before Red Rock Canyon was desert, it was the floor of a tropical sea. The fossils in these rocks are some 250 million years old — sea life from a world that existed way before the dinosaurs.

Standing in the Mojave sun, reading an ancient ocean floor in stone. Not a bad morning, 30 minutes from the Strip.
