 BRAEBURN Cocktail.

The ‘Braeburn’ is a type of apple.  The name refers to the calvados and apple cider used in the cocktail. A Dry shake, pour in a metal cup. Then use a coffee machine steam to warm it up.

 1 ½ oz Drouin Calvados Selection

 1 ½ oz Aval Cider

 ½ oz Pedro Xemines

 ½ oz Cinnamon Syrup

 ½ oz Lemon Juice

 1 Dash of Angostura Bitters

 1 teaspoon Pumpkin Pie Spice Butter

 “The Braeburn is a take on a hot butter rum cocktail. Braeburn is a hot drink highlighting calvados from France, Aval apple cider, cinnamon syrup and sweet Xemines from Spain. Pumpkin spice butter is added on top of the cocktail, which gives a buttery pumpkin spice flavor in your mouth and combines well with the calvados. The apple, cinnamon and lemon juice is sweet with a buttery flavor at the end. This drink is delicious when its cold outside to enjoy one or two” stated Xavier.

  

THE DUDE

This cocktail refers to the Dude in the film “big lebowski”, who always drink white Russians. Start with a Dry shake, then shaken with ice, served straight up in a milk bottle.

 1 ½ oz Pierre Ferrand 1840 Cognac

 ¾ oz Stumptown Coffee Brew

 ½ oz Port

 ½ oz Heavy Cream

 ½  oz Demerara

 1 whole egg        `

 4 DAB

 “I use Stumptown coffee brew, egg, heavy cream and cognac, which combines very well together and highlights holiday flavors. It’s a great morning drink after a long night. The idea was to add the coffee and cream to the cognac and port, which gives body to the drink with a light froth that comes in a bottle and is really pleasant to drink” He added.
